    **Ingredients**

    Meatballs
    – 1lb Grass-Fed beef

    – 2 cloves garlic

    – 1/2 diced onion

    – 2 Tbps coconut aminos

    – 1 Tbsp spicy brown mustard

    – 1 tsp each Salt and Pepper

    ​

    Pesto

    – 1 cup basil

    – 1/4 cup extra virgin olive oil

    – 1 Tbsp of the juice of a lemon

    – 1/4 cup pine nuts or cashews

    – 3-4 cloves of garlic

    – 1 tsp each Salt and Pepper

    ​

    Pasta

    – 2 Large Zuchini

    – 1/2 cup of cherry tomatoes (halved)

    ​

    **Instructions**

    – Add all meatball ingredients to a bowl and mix w/ hands

    – Form 15-20 meatballs

    – Cook in a pan on medium heat until a brown crust forms (about 5-8 minutes), then flip and brown the other side (another 5-8 minutes)

    – Remove from pan and **reserve the fats**

    – Spiralize 2 large zucchini, and add to the pan with meatball fat. cook until soft

    – add all pesto ingredients to a food processor and blend until smooth

    – Add 1/4 cup of pesto and sliced cherry tomatoes
