  1. Bruschetta. Tomato, Basil, Olive Oil and Balsamic Vinegar. Dice everything together in amounts you think taste good and place on top of toasted/untoasted french bread.

    Or,

    Baked Salmon, Roasted Asparagus, and Roasted Potatoes. The only hard part is putting each thing in the oven at the right time so it’s all done at the same time.

  2. Thaw a frozen pie crust. Saute chopped mushrooms, asparagus, and scallions in half a stick of butter. Separately, mix together some shredded mozzarella (or a mix of white cheeses, I just grab a preshredded 8oz bag) with 2 eggs, about 1/4 c parsley, and a bit of salt, pepper, oregano, basil, and garlic powder (and sometimes I’ve tossed in a smidge of thyme – add whatever spices sound good to you, really!). Combine that mixture with your cooked veggies, pour it all into the pie crust (in a pie dish, of course, haha). Bake at 375F for ~ half an hour. Beautiful, speedy quiche – I’ve made it for lots of dinners and also for parties, and it goes FAST. 🙂 If you want a little extra tang, smear some mustard on the pie crust before you add the filling. I’ve never added bacon but that couldn’t hurt either.
