  1. Fluffy Soft-baked Pumpkin Cookies


    2 cups flour

    1 tsp baking powder

    1 tsp baking soda

    1/2 tsp salt

    1/2 tsp cinnamon

    1 cup pumpkin puree (Or sweet potato!)

    1 cup packed brown sugar

    1/2 melted coconut oil

    2 tbsp maple syrup

    Mix all dry ingredients & set aside.

    Melt coconut oil & then mix all wet ingredients. Make sure all of your wet ingredients are room temperature to avoid hardening the melted coconut oil.

    Slowly add dry to wet & mix. 

    Refrigerate dough for 1 hour. (Or while the oven preheats if your impatient like me lol.) 

    Preheat oven to 350. Drop heaping tablespoons of dough onto an ungreased cookie sheet.

    Bake for 12-15 minutes.

    You can add cinnamon-sugar topping like I did on the ones above, or top with a pecan or two. Also, after mixing the wet and dry you can stir in extras like walnuts or chocolate chips! I’m telling y’all these cookies and AMAZING. Every fall I am told these are hands down the best goodie I share! Enjoy!
